2 medium pork fillets (454g)
1/3 cup Capilano Labonté
Clover Honey

1/3 cup Port Wine
1 can cranberry sauce
1 medium onion
225g fresh mushrooms

  1. Cut pork fillets into slices 1 cm thick.
  2. Cut onion into 8 and slice mushrooms.
  3. Heat olive oil in skillet and sauté pork to desired degree of doneness.
  4. Remove fillets.
  5. Sauté onions and mushrooms in same skillet.
  6. When they are cooked, add honey, cranberries and port.
  7. Simmer for 10 minutes.
  8. Add pork and simmer 5 minutes more. Season to taste with salt and pepper.
  9. Serve on rice or with baked potatoes.
