- Cut pork fillets into slices 1 cm thick.
- Cut onion into 8 and slice mushrooms.
- Heat olive oil in skillet and sauté pork to desired degree of doneness.
- Remove fillets.
- Sauté onions and mushrooms in same skillet.
- When they are cooked, add honey, cranberries and port.
- Simmer for 10 minutes.
- Add pork and simmer 5 minutes more. Season to taste with salt and pepper.
- Serve on rice or with baked potatoes.
